Nayrouz Olarte

Co-founder and Chief Operating Officer

Opening a restaurant is not an easy task. From choosing the correct location to employing the right people, the dream of owning a restaurant comes with a fair share of responsibilities. It is a challenge that requires you to be on your feet through the several months of constant designing, sourcing the right ingredients, obtaining the correct licenses, overlooking and perfecting every little detail of the project, all while working within a budget and strict timelines. This is why hiring a specialized consultant to guide you through the process is not a luxury, it is a money and time-saving necessity.
While having experience in the management of every aspect of a restaurant, Nayrouz Olarte has a vast experience in regulatory compliance with respect to franshising, establishing corporate standards and procedures for companies such as Paramount Fine Foods, as these relate both to master brands and sub-brands including Paramount Lebanese Kitchen, Paramount Butcher Shop, and Paramount on Wheels. Nayrouz has served as brand and operational liason between Canada and US to ensure brand consistency as Paramount expands into new markets.

Essi Tadrus

Co-founder & Executive Chef

Overseeing all aspects of  development, and is responsible for the culinary innovation of the organization. Tadrus’s background includes senior leadership positions in a variety of high growth businesses. His early career in the restaurant industry began at nineteen.  Developing restaurant brands,  consumer product goods and private label food services.
In subsequent senior roles, he was responsible for the rapid growth of numerous enterprises, including indirect cellular stores, convience stores, directional drilling companies.
With strong values; Essi Tadrus has dedicated his philanthropy to non profits , homeless shelters, business schools and is passionate about sharing his entrepreneurial journey through mentoring and teaching.

Bobby Shaw

Restaurant Consultant

Bobby Shaw is a restaurant executive who specializes in helping leadership teams develop strong people cultures that result in improved operational execution, better employee engagement, and higher levels of profitability. Bobby is also a restaurant operations expert and helps entrepreneurs create, develop, and launch new restaurant concepts.
Recognized in 2016 by FastCasual.com in their annual Top 100 Report as a Top 25 Executive, Bobby has held senior executive leadership roles over the years with several restaurant companies including McDonald’s, Chipotle Mexican Grill, Freebirds World Burrito, and Sheridan’s Unforked. Bobby is also the first franchisee of Southern Luv BBQ, created by Chef Essi Tadrus. The first Southern Luv will open in Summer 2022 in Independence, MO.

Maggie McDermott

Chief Marketing Officer

Maggie brings over 20 years of brand management and marketing communications expertise, honed with top agencies and F500 companies, combined with extensive development and growth work in early-stage companies. In the culinary space, she has experience working with restaurant brands, restauranteurs, chefs, consumer packaged goods, skills training programs, and social enterprises. Maggie is a self-proclaimed foodie and avid watcher of Food Network.
She is a graduate of Brown University and holds a Master’s Certificate in Franchise Management from Georgetown University. Maggie is the proud mother of two dynamic daughters.
